I'm a Christian wife & homeschooling mama, saved by faith through grace. I changed my family's diet from SAD (Standard American Diet) to healthy, delicious & nutritious traditional foods. I've recently discovered there's a name for the way that I eat. It's called Primal or Paleo (I like the diet and think of the men and women who worked hard from sunup to sundown, constantly on the go, eating meat, berries they picked, cheese they made. I do not believe in evolution). No grains, legumes, refined sugars, and no/limited dairy.

Faux Parmesan Chicken & Coleslaw

I had pork chops, but no Parmesan, so I made this instead for my family, who occasionally have cheese.

Faux Pork Chops
Pork chops
Coconut flour
Eggs
Basil, thyme & rosemary
Shredded mozzarella
Marinara

Beat egg in bowl.
Mix coconut flour with spices in pie plate.
Dip chops in whipped egg, then coconut flour & spices.
Fry in oiled skillet, I used my cast iron pan with leftover chicken grease. Flip to do the other side.
Put marinara in oven safe dish.
Put whole kit & caboodle in preheated to 350 oven for 25-30 minutes. add cheese last 5-10.

Serve with sauce & slaw. (I got a coleslaw mix from store and made the dressing. I didn't have yogurt, do I used some mayo & oil instead).
